Non-interventionist winemaking practices are used:
~ Gentle treatment of the fruit
~ Use of French yeasts strains combined with local wild yeasts
~ Low sulfur levels
~ The wines are bottled unfined: a small amount sees time in French Oak
Tasting Notes: Unmistakably Shiraz; dark purple to the rim, it clings to the glass leaving its glycerin endowed reddish remnant. The nose is best described as pure, unobstructed by excessive oak. The Shiraz truly shines. Dark, dense and creamy; aromas of anise, tobacco, and mocha emerge from the glass. An explosion of dark berry, black cherry, exotic spices and chocolate fill the mouth; complete from attack through a long, lingering finish. A very special Layer Cake indeed!

Just found this one locally, after drinking Primitovo and Cotes du Rhone for quite some time. The Shiraz is on par with the others. Great nose, flavor and finish at an unbelievable price. Lovin’ it!
